Catherine Councell
Catherine Councell (she/her) Catherine's relationship to coffee has evolved throughout her life: the more she learns, the more she values/enjoys it, the more she wants to share that joy. Her first Barista job was working in a retired double decker London bus in downtown Asheville, NC.
It was during this time that she learned coffee foundations from Counter Culture Coffee. Later, she joined the coffee program of Hugh Acheson's ATL restaurant, Empire State South, where she was mentored by Dale Donchey (Spiller Park & Dear Friend, Bagels). An Actor and Teaching Artist, Catherine moved to Iowa City to pursue her MFA in Theatre Arts - Acting at the University of Iowa.
While there she continued to grow in coffee by working in two different female-owned shops. Moving to CHI, a few years later, she received more advanced coffee education from Ken Baj (+others) while working for Intelligentsia Coffee Company from 2018-2021. When not working in coffee Catherine is a Teaching Artist for Chicago Children's Theatre, and an Actor in plays, film, and voice-over.
